VINIFICATION
Selective harvesting by hand in 20kg baskets, whole cluster pressing with no addition of sulphites until the end of fermentation. Natural racking after 12 hours and spontaneous fermentation in small horizontal stainless steel vats of 600 to 1000 litres.
ON THE PALATE
Straw yellow to the eye, the nose arrives with a minerally perfume, displaying hints of iodine, honey and citrus fruits. On the palate the onset is taut, well-structured, complex and intense, with mineral notes and good acidity.
