VINIFICATION
Selective manual harvesting in 20 kg baskets of the three vintages 2018, 2019 and 2020. Whole cluster pressing and separation between the first and second pressings, with only the latter used in the production of this wine. Fermentation occurs spontaneously in horizontal stainless-steel vats or in used barrels.
ON THE PALATE
To the eye it is pale straw yellow. The nose has a pure minerally aroma, with notes of grapefruit and a complexity resulting from a long maceration on the lees. On the palate it has a taut and structured yet fresh onset, with strong minerality and acidity, good persistence and saline and brioche notes.
