VINIFICATION
Whole bunches are pressed directly in decanting tanks, with no use of sulphites until the end of fermentation, in order to allow pre-oxidation of the must and a more complete spontaneous fermentation. The last fraction of the pressing, “Corda must”, is transferred to old Porto Santo wine barrels where it ages for 12 months.
ON THE PALATE
To the eye, it is golden yellow, almost coppery in colour. The nose is very intense, with caramelised salt aromas, halfway between a Madeira and a Jerez wine, unique and singular, with metallic, iodine and intense notes. Full-bodied, rich on the palate, it is highly concentrated and with a great deal of persistence.
