By hand. In 20 kg crates.
VINIFICATION
Early, overnight harvesting to respect the typical character of the vine, soft pressing, fermentation in natural yeast for 10 days with 5 minute daily pumping over. Aged for 24 months in barrels, low toasting.
ON THE PALATE
Ruby-coloured to the eye. The nose smells of garrigue (thyme and rosemary) with a hint of cocoa. On the palate it is fresh and mentholated, surprisingly acidic and silky-textured. The aromas of fine wood are persistent.
